Tasty Tuesday: Lasagna Soup

This is a recipe I make almost every week, so it seems only natural to share it for the first Tasty Tuesday! It’s super easy and almost better as leftovers. Almost. 😉


Lasagna Soup
Serves 4-6 (or more depending on portions and if served alone or not)

1 lb ground sausage (or beef or turkey…any ground meat really! I like sage sausage!)
1 15 oz can tomato sauce
1 15 oz can diced tomatoes (I cheat and use the ones with the basil and oregano already in it!)
1 onion diced
1 green pepper diced (optional)
1 clove garlic, diced (or as much as you want! I use a lot!)
1 container chicken broth (I use the low sodium!)
Lasagna noodles, broken up into pieces
Shredded mozzarella cheese

Brown the meat. Add the diced onion, diced pepper, and garlic to meat and cook until just tender. Add diced tomatoes and tomato sauce (and herbs if you didn’t buy the pre-herbed diced tomatoes) and broth. Bring to a boil and then turn to medium. Add noodles and cook until noodles are done.

Portion and top with shredded mozzarella cheese.
